Flours

Really? Does EVERY commercial GF baked good have to contain so much rice flour? It has no taste, is grainy and heavy. I am becoming a huge fan of the multi-floured mix. More flavour, more lightness, more real!

So that is my update. I made new recipe brownies and lemon coconut muffins this weekend. And re-made traditional dinner rolls. I was definately hungry for them.

Someday I will tell you my boring GF story. And hopefully, one day, I will have real flour news to share. Until then- eat more chocolate!

Pan sizes

Ok, here is my great "crap, I can't eat gluten, what should I do list"
1) go to a fancy store - do NOT freak out
2) buy yourself one or two loaves of gluten free bread (whatever sounds good)
3) buy a new peanut butter
Now you have something to eat.
You could also get: eggs, yogurt, GF Chex cereals, milk, potatoes, cheese, real meat.
You can find stuff to eat from that.
Then go buy some basic flavor ice cream (do read the lable) and check out the candy row - you deserve it and will need some sweet notes to get you through this.
Baking note of the day:
If you have an 8 inch pan, and it says 9 inch, be crazy and put it in the 10 inch pan and then you will not have to clean baking soda off the bottom of your oven.

Also, make your own granola - WAY cheaper, and you can put only the stuff you like in it.

I am planning like crazy for our weekend trip to dig up trilobites in central Utah. Hubby, three kids, sister in law and her three kids going. I am baking granola right now for my 'emergency food.' We will be out in the middle of nowhere for most of the day. Hungry Ann = GRUMPY Ann. Be prepared!

Freezing

So only way I think to survive this is make treats and freeze them (note: research freezing - NO yuckiness)
Then defrost a slice of cake or a cookie or two.
Defrosting coconut/almond cake right now. Will see how it turns out.

Coconut flour and almond meal

Those two things make a pretty good cake, even better with cream cheese frosting!
There is a little hope.
But it is still a pain to spend $5+ making one little 9x9 cake, you hardly want to share.
